HOW TO MAKE A PERFECT TEA, ACCORDING TO DILMAH’S DIHAN FERNANDO

Boil once, stir twice, experiment with spices and don't upset Mr Fernando!
That's the recipe for the perfect cuppa, according to from Dihan Fernando, son of Dilmah Founder Merrill J. Fernando.
Mr Fernando, who made a guest appearance at Joondalup IGA this week, revealed his tips for making the perfect brew.
The quantities - one teabag per 200ml of water or 2.5 grams of loose leaf tea per 250ml of water - and good water are essential, according to the tea expert.
Milk should come after, rather than before, brewing.
"Filtered water, boiled once, ideally because when you boil more times it becomes a little depleted of oxygen," he said.
"Stir a couple of times, you need to stir unless the tea doesn't come into contact with the water."
Black tea should be brewed for three minutes, while green tea should sit for two minutes, according to the tea guru.
Settling an age-old dinner table debate, Mr Fernando said milk should come after, rather than before, brewing.
But it doesn't stop there. Mr Fernando encouraged tea lovers to "experiment" with honey, in place of sugar or ginger, lemon or mint leaves.
"You have incredible ingredients in Western Australia so use some of those and spices," he said.
But, no matter whether you have your tea black, white, with one lump or none, Mr Fernando said there's one golden rule every good tea drinker must follow.
"Be creative but make sure you respect the tea by brewing it right, otherwise I can assure you my father will be in your home and he'll be asking what you've done with our tea!"
